A tall tropical grass with long, greenish stalks and lemon flavors, that is found throughout Southeast Asia. One of the most important flavorings in Thai and Vietnamese cooking. Also known as citronella, grass or root or the Indonesian name sereh. Use in clear broth soups, shellfish stews, or season fish and shellfish, chicken, pork, coconut, and vegetables. Lemongrass goes well with garlic, chiles, coriander, and shallots.
