The inner bark of the branches of a small evergreen tree that is native to Assam and northern Burma. Also known as Chinese Cinnamon. It is dark reddish brown in color. Cassia is more intense, bitter, astringent, and less fragrant than ceylon cinnamon. Use in braised dishes, sauces, curries, rice dishes, and stewed fruit such as pear, apple and cranberry.
