The branches of a small evergreen tree native to Assam and northern Burma, also known as Chinese cinnamon, are a dark reddish-brown color. Cassia is more intense, bitter, astringent, and less fragrant than Ceylon cinnamon. Use to enhance braised dishes, sauces, curries, rice dishes, and stewed fruit such as pear, apple, and cranberry.
