Ketchup — the American mother sauce, or condiment? Either way, it's the tomato-and-vinegar base under a long line of sauces and glazes, and here it is in dry form, built on organic tomato powder. Vinegar powder carries the tang; Dijon, onion, and a measure of chiles set a low background heat beneath it; and our Worcestershire powder rounds it out with a slow-cooked, savory depth. Add water and it reconstitutes into ketchup, or work it in dry to season fries, burgers, and meatloaf. Because you control the water, you control the concentration — a thin glaze or a thick paste from the same jar.

Suggested Uses

Ketchup — Whisk one part powder into two parts warm water and let it stand five minutes to thicken, then add more water until it pours the way you want.

French Fries — Dust hot fries the moment they leave the oil so the powder grabs the surface; about a teaspoon coats a single portion, and no extra salt is needed.

Barbeque Sauce Base — Reconstitute it into ketchup, then build outward with molasses, smoke, and heat; this is the tomato base Terra Spice builds its barbeque blends on. Treat it as the foundation and the additions as the recipe.

Meatloaf — Stir two tablespoons of powder with just enough water to make a brushable paste, then glaze the loaf for the last twenty minutes of baking; the sugar in the blend caramelizes into a tangy lacquer.

Tomato Vinaigrette — The vinegar, salt, and sugar are already in the blend, so the dressing is mostly oil: whisk one tablespoon of powder into three tablespoons of oil with a splash of water to loosen. Hold the salt — it is carrying plenty.

Fry Sauce — Stir one to two teaspoons of powder into a quarter cup of mayonnaise; let it sit a few minutes in the fridge to hydrate and thicken into a tangy sauce for fries or a crab cake.

Marinade — Reconstitute it thin, about one part powder to three parts water, for a quick marinade on chicken or pork; it seasons and lightly brines at once. Wipe the excess before high heat so the sugar does not scorch.
