The pink peppercorn is not peppercorn at all, but the dried berry of a South American rose plant that has a rose color, bitter pine like flavor that is more aromatic than pungent. It has a brittle outer shell that encloses a small seed. Crack on a cutting board by chopping with a chef knife, put in a spice grinder, or grind in a peppermill. Use in savory or sweet applications. Pink peppercorns are in the same botanical family as cashew and pistachio.
