An interesting spice that is related to cardamom. Grains of paradise have a taste that is similar to pepper, but with notes of cinnamon and cardamom. They were used as a replacement for pepper when the price was high, and are native to the coast of West Africa. Use to spice wine and beer, compliment braised lamb, meat and potato dishes, or to season fish, grains and vegetables.
