An exciting spice related to cardamom, grains of paradise, has a taste similar to pepper but with notes of cinnamon and cardamom. Other names include false pepper, melegueta pepper, alligator pepper, and guinea pepper. They were used as a replacement for pepper when the price was high and are native to the coast of West Africa. Use to spice wine and beer, compliment braised lamb, meat and potato dishes, or season fish, grains and vegetables.
